Now, I know coconut is a love-it-or-hate-it food, but people, once you eat one of these cupcakes, you’ll be on the love-it side.
OK, perhaps that is an exaggeration, but you can stick ANYTHING inside these cupcakes that will suit your fancy.
What you need:
cupcake batter (someday I’ll post my favorite batter that is from scratch, but honestly, any chocolate box mix is fine-I used the dark chocolate Duncan Hines this time around)
fun-sized mounds bar (12, cut in half)
frosting (again, the scratch recipe for another time…I used a butter cream this time around
cupcake liners (trust me)
What you do:
Mix the batter, per directions or recipe. Spoon batter into cupcake liners, a little less than half full. Place halved Mounds (or candy of choice) pieces into liners. Cover the candy with batter until the liner is about 2/3 full. Sprinkle coconut on top of batter.
Bake as directed. Let cool. Frost and enjoy.
Seriously, this is not rocket science, folks. Just a fun way to spice up boxed cupcakes!
